Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare your baking sheet or loaf pan by greasing it with olive oil.
  2. In a skillet, heat a tablespoon of olive oil over medium heat. Add finely chopped onion, bell pepper, and celery, sautéing for 5–7 minutes. Stir in minced garlic and cook for an additional minute before removing from heat.
  3. In a large mixing bowl, combine the ground beef, ground pork, and ground veal. Fold in the sautéed vegetables, breadcrumbs, grated Parmesan, eggs, parsley, basil, salt, and pepper gently.
  4. Transfer the meat mixture to your prepared baking sheet or loaf pan, shaping it into a loaf and spreading half of the tomato sauce on top.
  5. Bake the meatloaf in the preheated oven for about 1 hour until golden and a meat thermometer reads 160°F (71°C).
  6. Remove the meatloaf from the oven and let it rest for 10–15 minutes before slicing and serving warm with remaining tomato sauce.
