Step-by-Step Instructions
  1. Rinse 1 cup of black rice under cool running water until the water runs clear. Optionally soak in water for 1 hour, then strain.
  2. In a medium saucepan, combine the soaked black rice with 2 cups of water. Bring to a boil, reduce to low, cover, and simmer for 35 minutes.
  3. Once the rice is tender, let it sit covered for 10 minutes. Then add 1/4 cup sugar and a pinch of salt to the warm rice, fluff gently.
  4. In a blender, combine 1 cup of coconut milk and a few ice cubes. Blend until smooth.
  5. Layer the cooked black rice into bowls, pour the chilled coconut milk mixture over the rice.
  6. Top with fresh mango slices and serve.
