- Bring a large pot of salted water to a rolling boil. Add your choice of noodles and cook according to package instructions (6–8 minutes), stirring occasionally. Drain and rinse under cold water.
- In a medium mixing bowl, combine peanut butter, soy sauce, maple syrup, and chili garlic sauce. Whisk until smooth and creamy.
- In a large mixing bowl, combine the drained noodles with the peanut sauce. Toss gently with tongs or chopsticks until evenly coated.
- If adding optional veggies or protein, mix them in now until evenly distributed.
- Transfer to serving plates and garnish with peanuts, green onions, or sesame seeds. Serve warm or at room temperature.
