In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and beef broth. Mix well and bring to a simmer.
Transfer the beef mixture to a slow cooker. Cover and cook on low for 4 hours or high for 2 hours.
About 15 minutes before serving, stir in 1 cup of shredded cheddar cheese until melted.
To serve, layer Fritos in bowls, top with the beef mixture, and sprinkle with remaining cheese.
Add a dollop of sour cream and garnish with diced tomatoes, green onions, and black olives if desired.
