Ingredients
  

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 can 15 ounces corn, drained
  • 1 can 10 ounces diced tomatoes with green chilies
  • 1 cup beef broth
  • 2 cups Fritos corn chips
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup diced tomatoes for topping
  • 1/2 cup sliced green onions for topping
  • 1/2 cup sliced black olives optional, for topping

Method
 

  1. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
  2. Stir in the taco seasoning, black beans, corn, diced tomatoes with green chilies, and beef broth. Mix well and bring to a simmer.
  3. Transfer the beef mixture to a slow cooker. Cover and cook on low for 4 hours or high for 2 hours.
  4. About 15 minutes before serving, stir in 1 cup of shredded cheddar cheese until melted.
  5. To serve, layer Fritos in bowls, top with the beef mixture, and sprinkle with remaining cheese.
  6. Add a dollop of sour cream and garnish with diced tomatoes, green onions, and black olives if desired.
