Preparation
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a mixing bowl, combine cubed sweet potatoes, olive oil, cinnamon, and nutmeg; toss to coat.
- Spread sweet potatoes on the prepared baking sheet and roast for 50-60 minutes until tender.
- Reduce oven temperature to 375°F (190°C) and grease a 9x13 baking dish.
- In a mixing bowl, combine roasted sweet potatoes, almond milk, vanilla, brown sugar, maple syrup, and spices, along with raisins and marshmallows.
- Transfer the mixture to the greased baking dish and dot the top with butter and extra marshmallows.
- In a bowl, combine pecans and maple syrup, then sprinkle over the sweet potato mixture.
- Cover with aluminum foil and bake for 15 minutes, then uncover and bake for an additional 15 minutes.
- Allow to cool for about 10 minutes before serving.
