Ingredients
  

For the Filling
  • 4 cups Sweet Potatoes cubed, use organic for best flavor
  • 2 tablespoons Extra Virgin Olive Oil can substitute melted coconut oil
  • 1 teaspoon Ground Cinnamon for warming flavor
  • 1/2 teaspoon Ground Nutmeg for additional warmth
  • 1 cup Almond Milk use any plant-based milk
  • 1 teaspoon Vanilla Extract use pure vanilla for best taste
  • 4 tablespoons Unsalted Butter can swap for vegan butter
  • 1/2 cup Brown Sugar or use coconut sugar for less sweetness
  • 1/4 cup Pure Maple Syrup for the maple flavor
  • 1/2 teaspoon Ground Allspice optional but recommended
  • 1/2 cup Organic Raisins soaked in hot water for softness
  • 2 cups Marshmallows vegan marshmallows available
For the Topping
  • 1 cup Raw Pecans or substitute with walnuts

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. In a mixing bowl, combine cubed sweet potatoes, olive oil, cinnamon, and nutmeg; toss to coat.
  3. Spread sweet potatoes on the prepared baking sheet and roast for 50-60 minutes until tender.
  4. Reduce oven temperature to 375°F (190°C) and grease a 9x13 baking dish.
  5. In a mixing bowl, combine roasted sweet potatoes, almond milk, vanilla, brown sugar, maple syrup, and spices, along with raisins and marshmallows.
  6. Transfer the mixture to the greased baking dish and dot the top with butter and extra marshmallows.
  7. In a bowl, combine pecans and maple syrup, then sprinkle over the sweet potato mixture.
  8. Cover with aluminum foil and bake for 15 minutes, then uncover and bake for an additional 15 minutes.
  9. Allow to cool for about 10 minutes before serving.
