Ingredients
  

  • 1 pound ground chicken
  • 1 small onion finely grated
  • 2 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1 tablespoon red pepper flakes adjust to taste
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 skewers if using wooden skewers, soak in water for 30 minutes

Method
 

  1. In a large bowl, combine the ground chicken, grated onion, minced garlic, chopped parsley, red pepper flakes, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Cover the mixture and refrigerate for at least 30 minutes to allow the flavors to meld.
  3. Preheat your grill or grill pan over medium-high heat. Lightly brush the skewers with olive oil to prevent sticking.
  4. Divide the chicken mixture into 8 equal portions and mold each portion around a skewer, pressing firmly to ensure it holds its shape.
  5. Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is fully cooked and has nice grill marks.
  6. Remove from the grill and let rest for a few minutes before serving.
  7. Serve the kebabs with warm pita bread, fresh vegetables, and your favorite dipping sauce.
