  • 2 large chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper adjust for spice preference
  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 cup breadcrumbs preferably panko
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup unsalted butter melted
  • 4 cloves garlic minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice

Method
 

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Slice each chicken breast in half horizontally to create thinner fillets. Season both sides with salt, black pepper, paprika, and cayenne pepper.
  3. Set up a breading station: Place the flour in one shallow dish, beat the egg in a second dish, and combine the breadcrumbs and Parmesan cheese in a third dish.
  4. Dredge each chicken fillet in flour, shaking off excess. Dip into the beaten egg, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Arrange the breaded chicken fillets on the prepared baking sheet. In a small bowl, mix the melted butter, minced garlic, chopped parsley, and lemon juice. Drizzle this mixture over the chicken fillets.
  6. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the coating is golden brown. An internal temperature of 165°F should be reached.
  7. Let the chicken rest for 5 minutes before serving. Garnish with additional parsley if desired.
