- In a small bowl, melt about 4 tablespoons of butter, then add 3-4 minced garlic cloves and sauté briefly until fragrant.
- Stir in ¼ cup of sweet chili sauce, 2 tablespoons of soy sauce, and juice of half a lemon. Mix until smooth.
- Heat a nonstick skillet over medium-high heat, pat the cod fillets dry, season them, then add to the pan, searing for 4-5 minutes.
- Baste the fillets with sauce while cooking, flip and cook for another 4-5 minutes until cooked through.
- Remove the cod from the skillet, drizzle with leftover sauce, garnish with parsley, and serve immediately.
