Method

Step-by-Step Instructions
  1. In a heavy-bottomed saucepan, combine chopped fresh strawberries, granulated sugar, and room temperature water. Let it sit for about 5 minutes to draw out juices. Place over medium heat and simmer for 6-8 minutes until the mixture thickens and becomes glossy. Stir in a splash of lemon juice and vanilla extract for added flavor, then cool to room temperature, and strain to extract the syrup.
  2. Sift 1-2 teaspoons of ceremonial matcha powder into a clean bowl to avoid lumps. Add approximately 2 ounces of hot water, around 175°F (80°C), and stir gently with a whisk to create a smooth paste. Whisk vigorously until the mixture is frothy and has a vibrant green color. Taste and sweeten with sugar if preferred, then set aside.
  3. Fill your tall glasses with ice cubes, making sure to leave enough room for the syrup, milk, and matcha. Pour a generous amount of the strawberry syrup into the bottom of each glass, allowing it to settle. Slowly layer cold milk over the syrup using the back of a spoon to maintain distinct layers.
  4. Carefully spoon the whisked matcha over the milk in each glass, using the back of a spoon to preserve the layers. For a whimsical touch, garnish with slices of fresh strawberries and an optional drizzle of extra strawberry syrup on top.
  5. Insert a straw for easy sipping and enjoy your gorgeous Strawberry Matcha Latte immediately.
