- In a heavy-bottomed saucepan, combine chopped fresh strawberries, granulated sugar, and room temperature water. Let it sit for about 5 minutes to draw out juices. Place over medium heat and simmer for 6-8 minutes until the mixture thickens and becomes glossy. Stir in a splash of lemon juice and vanilla extract for added flavor, then cool to room temperature, and strain to extract the syrup.
- Sift 1-2 teaspoons of ceremonial matcha powder into a clean bowl to avoid lumps. Add approximately 2 ounces of hot water, around 175°F (80°C), and stir gently with a whisk to create a smooth paste. Whisk vigorously until the mixture is frothy and has a vibrant green color. Taste and sweeten with sugar if preferred, then set aside.
- Fill your tall glasses with ice cubes, making sure to leave enough room for the syrup, milk, and matcha. Pour a generous amount of the strawberry syrup into the bottom of each glass, allowing it to settle. Slowly layer cold milk over the syrup using the back of a spoon to maintain distinct layers.
