For the Meatloaf
  • 1 lb Ground beef or mix with pork
  • 1 cup Breadcrumbs gluten-free if necessary
  • 1/2 cup Parmesan cheese or Pecorino
  • 1/4 cup Fresh parsley or dried parsley
  • 1 tbsp Fresh basil or 1 tsp of dried basil
  • 1 medium Onion or shallots
  • 3 cloves Garlic or garlic powder
  • 2 large Eggs or flax eggs for vegan
  • 1 cup Marinara sauce any tomato-based sauce works
  • 1 tbsp Italian seasoning or a mix of oregano and rosemary
  • 1 tsp Salt adjust to taste
  • 1 tsp Pepper adjust to taste
  • 1 cup Mozzarella cheese or provolone
  • 1/2 cup Sliced pepperoni or prosciutto optional
For Topping
  • 1 cup Additional marinara sauce

Method
 

Step-by-Step Instructions
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sauté chopped onions and minced garlic in a skillet over medium heat until translucent, about 5 minutes, then cool slightly.
  3. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, basil, sautéed onions and garlic, eggs, marinara sauce, Italian seasoning, salt, and pepper. Mix gently without overworking.
  4. Transfer the mixture to the baking sheet, forming a rectangle about 1 inch thick.
  5. Spread shredded mozzarella over the top and add pepperoni or prosciutto if using.
  6. Roll the meat mixture into a tight log, enclosing the filling inside.
  7. Place the rolled meatloaf seam-side down on the baking sheet and pour marinara sauce over the top.
  8. Bake for about 60 minutes, or until the internal temperature reaches 160°F (70°C).
  9. Remove and let rest for 15-20 minutes before slicing.
