  • 1 pound Diced Chicken Breast or tofu for vegetarian option
For the Vegetables
  • 1 cup Bell Peppers sliced
  • 1 cup Broccoli florets
  • 1 cup Snap Peas
For the Sauce
  • 1/4 cup Sweet Chili Sauce store-bought or homemade
  • 1/2 cup Coconut Milk or almond milk
  • 2 tablespoons Lime Juice or lemon juice
  • 1 tablespoon Oil for cooking

Cooking Steps
  1. In a large skillet, heat a tablespoon of oil over medium-high heat. Add diced chicken breast and cook for about 5-7 minutes, stirring occasionally.
  2. Once the chicken is cooked, add bell peppers, broccoli, and snap peas into the skillet. Stir-fry for an additional 3-5 minutes until vegetables are tender yet crisp.
  3. In a small bowl, whisk together coconut milk and lime juice. Pour this over the cooked chicken and vegetables, stirring gently to coat.
  4. Plate the Sweet Chili Chicken Bowl, and drizzle extra sweet chili sauce on top if desired.
