Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and grease a loaf pan with cooking spray or oil.
  2. Soak panko breadcrumbs in milk for about 5 minutes.
  3. In a large mixing bowl, combine ground beef, ground pork, soaked panko, eggs, chopped onion, minced garlic, gochujang, soy sauce, sesame oil, brown sugar, ground ginger, salt, and pepper. Mix until just combined.
  4. Shape the meat mixture into a loaf and transfer it to the prepared loaf pan.
  5. In a separate bowl, whisk together ketchup, rice vinegar, honey, and an extra spoonful of gochujang.
  6. Spread the glaze evenly over the top of the meatloaf.
  7. Bake for about 50-55 minutes, until the internal temperature reaches 160°F (71°C).
  8. Let the meatloaf rest for about 10 minutes before slicing, then garnish with sesame seeds and sliced green onions.
