Ingredients

  • 8 large flour tortillas
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked and crumbled ground beef or turkey
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1/2 cup salsa
  • 1 teaspoon taco seasoning
  • 1/4 cup sliced black olives optional
  • Fresh cilantro for garnish optional

Method

  1. In a medium bowl, mix the softened cream cheese, shredded cheddar cheese, taco seasoning, and salsa until well combined.
  2. Lay a tortilla flat on a clean surface. Spread a generous layer of the cheese mixture over the entire tortilla, leaving a small border around the edges.
  3. Evenly distribute the cooked ground beef or turkey, shredded lettuce, diced tomato, and black olives (if using) over the cheese mixture.
  4. Starting from one end, carefully roll the tortilla tightly to form a log. Repeat with the remaining tortillas and filling.
  5. Once all tortillas are rolled, wrap each roll-up in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. After chilling, remove the plastic wrap and slice each roll-up into 1-inch pieces. Arrange on a serving platter and garnish with fresh cilantro if desired.
