Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Line the baking pan with parchment paper and spray with baking spray.
  2. Combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of the prepared pan.
  3. In a bowl, beat cream cheese, sugar, sour cream, and vanilla until smooth. Add eggs one at a time and mix gently.
  4. Pour the filling over the crust and bake for 25-35 minutes until edges are set and center is slightly jiggly. Cool and refrigerate for 3-4 hours.
  5. In a saucepan, cook the strawberries, sugar, water, lemon juice, and cornstarch over medium heat until thickened. Cool to room temperature.
  6. Slice the chilled cheesecake into bars, top with strawberry sauce, and drizzle with melted white chocolate.
