  • 4 fillets Tilapia
  • Salt to taste
  • Pepper to taste
For the Roasted Pepper Sauce
  • 3 cups Red Bell Peppers sliced
  • 3 cloves Garlic fresh
  • 2 tablespoons Olive Oil or avocado oil
  • 2 tablespoons Lemon Juice or lime juice
  • Red Pepper Flakes optional, to taste
  • Fresh Herbs basil or parsley for garnish

Method
 

Cooking Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the red bell peppers into strips and toss them with olive oil, salt, and pepper. Spread onto a baking sheet and roast for about 20 minutes.
  3. Blend the roasted peppers with fresh garlic and lemon juice until smooth.
  4. Heat olive oil in a skillet, season tilapia with salt and pepper, and cook for 3-4 minutes on each side until golden brown.
  5. Pour the roasted pepper sauce over the tilapia and warm through for 1-2 minutes.
  6. Serve the tilapia with extra sauce and garnish with fresh herbs.
