Dough Preparation
- In a stand mixer bowl, combine bread flour, salt, and instant yeast. Pour in warm water and drizzle olive oil, then knead the mixture on medium speed for about 8-10 minutes until a smooth, elastic dough forms.
- Transfer the kneaded dough to a lightly oiled bowl, turning it to coat with oil. Cover and let it proof for about 2 hours.
Pizza Assembly
- Prepare your Detroit-style pizza pan with generous olive oil. Once the dough has risen, stretch and press it into the pan, pushing it to the edges.
- Preheat your oven to 500°F (260°C).
- Layer diced Jack cheese into the corners of the pan, dollop the pizza sauce over, and finish with sliced pepperoni.
- Bake for about 15 minutes, watching for caramelized edges.
- Once done, cool for a few minutes, slice into squares, and serve.
