Method
 

Dough Preparation
  1. In a stand mixer bowl, combine bread flour, salt, and instant yeast. Pour in warm water and drizzle olive oil, then knead the mixture on medium speed for about 8-10 minutes until a smooth, elastic dough forms.
  2. Transfer the kneaded dough to a lightly oiled bowl, turning it to coat with oil. Cover and let it proof for about 2 hours.
Pizza Assembly
  1. Prepare your Detroit-style pizza pan with generous olive oil. Once the dough has risen, stretch and press it into the pan, pushing it to the edges.
  2. Preheat your oven to 500°F (260°C).
  3. Layer diced Jack cheese into the corners of the pan, dollop the pizza sauce over, and finish with sliced pepperoni.
  4. Bake for about 15 minutes, watching for caramelized edges.
  5. Once done, cool for a few minutes, slice into squares, and serve.
