- Prepare Mango Curd: Whisk together mango pulp, sugar, and cornstarch slurry over medium heat for 3–5 minutes until thickened. Cool completely.
- Make the Soak: Combine wild mango balsamic, extra mango pulp, and hot water. Stir until blended and set aside.
- Mix Cream: Beat vegan cream cheese until fluffy, then add yogurt and powdered sugar. Fold in half of the mango curd.
- Assemble Tiramisu: Dip vegan cookies in the soaking liquid, layer in the dish, add cream mixture and diced mango, and repeat until finished.
- Chill: Cover and refrigerate for at least 2 hours, preferably overnight.
- Finish Off: Spread remaining mango curd on top and garnish with mango slices. Serve chilled.
