Pasta
  • 8 oz Rotini or any medium pasta shape
Salad
  • 1 cup Feta Cheese can be substituted with mozzarella or omitted for dairy-free
  • 1 medium English Cucumber any cucumber variety can be used
  • 1 cup Grape Tomatoes halved cherry tomatoes are a substitute
  • 1 medium Bell Pepper any color; red, yellow, or green
  • 1/2 cup Black Olives optional; omit for lighter taste
  • 1 small Red Onion or green onions for a milder taste
  • 1/4 cup Fresh Parsley or other herbs like basil or cilantro
Dressing
  • 1/2 cup Italian Dressing homemade version can elevate flavors
  • Salt to taste
  • Black Pepper to taste

Method
 

Cooking
  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Chop vegetables into bite-sized pieces while pasta cools. Set aside.
  3. In a large bowl, combine cooled pasta, vegetables, and parsley. Pour dressing over and toss gently.
  4. Season with salt and pepper, then fold in feta cheese.
  5. Cover and refrigerate for at least 2 hours before serving.
