Pea Bruschetta Instructions
- In a food processor, combine defrosted peas, pea shoots, Parmesan cheese, olive oil, lemon juice, and garlic. Blend to a rough paste and season with salt and pepper. Set aside.
- Preheat broiler on high for about 5 minutes. Slice ciabatta into thick pieces and place on a baking sheet. Drizzle olive oil and toast for 2-3 minutes each side until golden brown.
- Rub cut garlic on the warm toasted ciabatta slices to infuse flavor. Set aside.
- Spread pea topping over each toasted ciabatta slice. Garnish with additional Parmesan, lemon zest, pea shoots, and olive oil before serving.
