  • 1 cup Frozen Peas Defrosted or blanched
  • 1 cup Pea Shoots Optional garnish
  • 1/2 cup Grated Parmesan Cheese
  • 2 tablespoons Olive Oil For blending and drizzling
  • 1 tablespoon Lemon Juice Can substitute with lime juice
  • 1/2 clove Garlic Use half in the spread and rub on toast
  • Salt and Pepper Adjust to taste
Bread
  • 1 loaf Ciabatta Bread Can substitute with other rustic bread

Method
 

Pea Bruschetta Instructions
  1. In a food processor, combine defrosted peas, pea shoots, Parmesan cheese, olive oil, lemon juice, and garlic. Blend to a rough paste and season with salt and pepper. Set aside.
  2. Preheat broiler on high for about 5 minutes. Slice ciabatta into thick pieces and place on a baking sheet. Drizzle olive oil and toast for 2-3 minutes each side until golden brown.
  3. Rub cut garlic on the warm toasted ciabatta slices to infuse flavor. Set aside.
  4. Spread pea topping over each toasted ciabatta slice. Garnish with additional Parmesan, lemon zest, pea shoots, and olive oil before serving.
