- In a large bowl, combine the shredded chicken, softened cream cheese, diced sausage, chopped green onions, cheddar cheese, a splash of hot sauce, and Cajun seasoning. Stir until all ingredients are well mixed and creamy.
- Lay an egg roll wrapper on a clean surface, pointing one corner toward you. Place approximately 2 tablespoons of the filling at the bottom corner of the wrapper, fold the corner over, tuck in the sides, and roll tightly while sealing the top with a beaten egg.
- In a deep skillet or fryer, pour enough vegetable oil to reach about 2 inches in depth and heat the oil over medium-high heat until it reaches 350°F (175°C).
