Ingredients
  

  • 2 large flour tortillas
  • 1 pound ground beef
  • 1 small onion diced
  • 1 can 15 ounces refried beans
  • 1 can 10 ounces red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded lettuce
  • 1 medium tomato diced
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Method
 

  1. In a large skillet over medium heat, brown the ground beef with the diced onion. Drain excess fat.
  2. Stir in the garlic powder, chili powder, salt, and pepper. Cook for an additional 2 minutes.
  3. Warm the refried beans in a small saucepan over low heat until heated through.
  4. Preheat your oven to 350°F.
  5. To assemble the burritos, spread a layer of refried beans on each tortilla, followed by the beef mixture. Roll each tortilla tightly and place them seam-side down in a baking dish.
  6. Pour the enchilada sauce evenly over the rolled burritos.
  7. Sprinkle the shredded cheddar cheese on top.
  8. Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
  9. Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomato, and a dollop of sour cream before serving.
