Warm the refried beans in a small saucepan over low heat until heated through.
Preheat your oven to 350°F.
To assemble the burritos, spread a layer of refried beans on each tortilla, followed by the beef mixture. Roll each tortilla tightly and place them seam-side down in a baking dish.
Pour the enchilada sauce evenly over the rolled burritos.
Sprinkle the shredded cheddar cheese on top.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes. Top with shredded lettuce, diced tomato, and a dollop of sour cream before serving.
