Step-by-Step Instructions
  1. Peel and slice blood oranges, regular oranges, and grapefruit into 1/4 inch thick rounds. Arrange on a cutting board.
  2. In a medium bowl, whisk together extra virgin olive oil, lemon juice, honey, and Dijon mustard until emulsified. Adjust seasoning with salt and pepper.
  3. Wash and dry the arugula leaves. Thinly slice the red onion and soak in cold water for 5-10 minutes. Layer arugula, citrus rounds, and soaked red onion on a platter.
