- In a mixing bowl, whisk together minced garlic, lemon juice, lemon zest, olive oil, honey, dried oregano, smoked paprika, salt, and pepper until well combined.
- Add the chicken thighs to the marinade, coating them thoroughly. Seal in a ziplock bag or cover in a dish, then refrigerate for at least 30 minutes—ideally overnight.
- Transfer the marinated chicken thighs along with any remaining marinade into your slow cooker. Pour in the chicken broth. Set to low for 6-7 hours or high for 3-4 hours.
- If desired, preheat oven broiler and transfer the cooked chicken to a baking tray, skin-side up. Broil for 3-4 minutes until the skin is golden brown.
- Garnish with freshly chopped parsley and serve over rice, steamed vegetables, or a fresh salad.
