Step-by-Step Instructions
  1. In a mixing bowl, whisk together minced garlic, lemon juice, lemon zest, olive oil, honey, dried oregano, smoked paprika, salt, and pepper until well combined.
  2. Add the chicken thighs to the marinade, coating them thoroughly. Seal in a ziplock bag or cover in a dish, then refrigerate for at least 30 minutes—ideally overnight.
  3. Transfer the marinated chicken thighs along with any remaining marinade into your slow cooker. Pour in the chicken broth. Set to low for 6-7 hours or high for 3-4 hours.
  4. If desired, preheat oven broiler and transfer the cooked chicken to a baking tray, skin-side up. Broil for 3-4 minutes until the skin is golden brown.
  5. Garnish with freshly chopped parsley and serve over rice, steamed vegetables, or a fresh salad.
