  • 2 cups shredded zucchini drained well
  • 1 teaspoon salt to draw out moisture
  • 2 eggs acts as binder
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese half for crust, half for topping
For the Filling
  • 1 pound ground beef can swap for turkey
  • 1 cup chopped onion
  • 1 cup pizza sauce
  • 1 cup green bell pepper diced
  • 1 cup sliced mushrooms
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
For the Toppings
  • 1 cup shredded mozzarella cheese reserved from crust
  • ½ cup shredded cheddar cheese

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine shredded zucchini and salt. Let sit for 10 minutes to draw out moisture.
  3. Squeeze out excess moisture from the zucchini with a clean towel. Mix with eggs, grated Parmesan, and half of the shredded mozzarella.
  4. Grease a 9x13-inch baking dish and press the zucchini mixture to form a crust. Bake for 20 minutes until set and golden brown.
  5. In a skillet, heat ground beef and chopped onion over medium heat until browned. Drain excess fat.
  6. Add pizza sauce, green bell pepper, mushrooms, oregano, garlic powder, and black pepper to the skillet. Cook for 5 minutes.
  7. Spread the beef mixture over the crust evenly. Press down gently.
  8. Top with the remaining mozzarella and all cheddar cheese. Bake for another 20 minutes until cheese is melted and bubbly.
  9. Let the casserole cool for a few minutes before slicing and serving warm.
