Description

Booyah Soup is a hearty and comforting dish made with chicken, beef, and a variety of vegetables, perfect for warming up on a chilly day.


Ingredients

  • 2 tablespoons vegetable oil
  • 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 pound beef stew meat, cut into bite-sized pieces
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups beef broth
  • 2 cups water
  • 2 large carrots, sliced
  • 2 large potatoes, diced
  • 1 cup green beans, chopped
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 teaspoons dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chicken and beef, browning them on all sides for about 5-7 minutes.
  2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
  3. Pour in the chicken broth, beef broth, and water. Stir in the carrots, potatoes, green beans, corn, diced tomatoes, thyme, oregano, salt, pepper, and bay leaf.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the meat is tender and the vegetables are cooked through.
  5. Remove the bay leaf before serving. Adjust seasoning with more salt and pepper if desired. Serve hot.

Notes

  • For added flavor, consider adding a splash of Worcestershire sauce or a tablespoon of hot sauce for a kick.
  • You can substitute the beef with ground turkey or omit the meat entirely for a vegetarian version, using vegetable broth and additional vegetables.
