- 2 tablespoons vegetable oil
- 1 pound chicken thighs, boneless and skinless, cut into bite-sized pieces
- 1 pound beef stew meat, cut into bite-sized pieces
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 4 cups beef broth
- 2 cups water
- 2 large carrots, sliced
- 2 large potatoes, diced
- 1 cup green beans, chopped
- 1 cup corn kernels (fresh or frozen)
- 1 can (14.5 ounces) diced tomatoes, undrained
- 2 teaspoons dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 bay leaf
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chicken and beef, browning them on all sides for about 5-7 minutes.
- Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent, about 3-4 minutes.
- Pour in the chicken broth, beef broth, and water. Stir in the carrots, potatoes, green beans, corn, diced tomatoes, thyme, oregano, salt, pepper, and bay leaf.
- Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 1 to 1.5 hours, stirring occasionally, until the meat is tender and the vegetables are cooked through.
- Remove the bay leaf before serving. Adjust seasoning with more salt and pepper if desired. Serve hot.
Notes
- For added flavor, consider adding a splash of Worcestershire sauce or a tablespoon of hot sauce for a kick.
- You can substitute the beef with ground turkey or omit the meat entirely for a vegetarian version, using vegetable broth and additional vegetables.
