A comforting and hearty Irish Vegetable Soup packed with nutritious vegetables and flavors.
Ingredients

- 4 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 1 medium potato, peeled and diced
- 1 cup green beans, chopped
- 1 cup frozen peas
- 6 cups vegetable broth
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the carrots and celery to the pot, cooking for another 5 minutes until they begin to soften.
- Stir in the diced potato and green beans, cooking for an additional 3 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Once boiling, reduce the heat to low and add the frozen peas, thyme, parsley, salt, and pepper.
- Simmer the soup for 20-25 minutes, or until all the vegetables are tender.
- Taste and adjust seasoning if necessary before serving.
Notes
- For a creamier soup, blend half of the soup with an immersion blender and mix it back in.
- Add cooked lentils or beans for extra protein and heartiness.
