Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Blend together the cinnamon graham crackers, granulated sugar, and melted unsalted butter in a food processor until it resembles coarse crumbs.
  3. Line a cupcake baking pan with paper liners and evenly distribute the crust mixture into the cups, pressing down firmly.
  4. In a mixing bowl, beat the softened cream cheese until smooth, then gradually add the sugar, eggs, vanilla extract, and ground cinnamon.
  5. Spoon the cheesecake mixture onto each crust, filling about three-quarters full.
  6. Bake in the preheated oven for 16-20 minutes until the edges are set.
  7. Allow to cool in the pan briefly before transferring to a wire rack to cool completely. Garnish with fresh berries if desired.
