- In a mixing bowl, combine Oreo crumbs with melted butter until evenly moistened. Line a muffin tin with cupcake liners and press the crumb mixture firmly into each liner to form a crust. Bake for 5 minutes until set and allow to cool.

- In a large mixing bowl, beat the cream cheese, light brown sugar, and flour together until fully combined and smooth. Gradually blend in the sour cream and vanilla extract.
- Add the eggs one at a time, mixing on low speed, then gently fold in the chopped Rolos.
- Pour the filling into each crust, filling almost to the top. Bake for about 13 minutes. After baking, turn off the oven and let cool inside for 10 minutes with the door slightly ajar.
- Whip the heavy cream, powdered sugar, cocoa powder, and vanilla in a chilled mixing bowl until stiff peaks form.
- Pipe the whipped cream onto the cheesecake bites, drizzle with caramel and chocolate sauce, and place a halved Rolo on top. Chill before serving.
