- In a mixing bowl, combine the shredded chicken, softened cream cheese, and optional sausage. Add green onions, cheddar cheese, hot sauce, and cajun seasoning. Stir until creamy and well-combined.
- Lay an egg roll wrapper diagonally, spoon about 2 tablespoons of filling onto the bottom third, fold the bottom over, fold in the sides, and roll tightly, sealing the edge with beaten egg.
- Heat 2 inches of vegetable oil in a deep skillet to 350°F (175°C). Use a thermometer to ensure the correct temperature.
- Carefully place a few egg rolls into hot oil and fry for 3–4 minutes on each side until golden brown and crispy. Transfer to a plate lined with paper towels.
